I will only be teaching a couple more classes through the end of the year before my new little guy arrives...

October 11th I will be teaching at the Seward Civic Center through Southeast Community College in Seward. This is a great chance for those of you outside of Lincoln to be able to learn how to save big at the grocery store!

October 23rd I will be teaching at Southeast Community College Continuing Education from 9-11 am

October 27th I will be teaching a class in Gretna for all of you that follow in Omaha and Council Bluffs. It would be great to get to meet all of you and get imput on the improving the blog from my Omaha/C Bluffs peeps! I will post how to register for this class as the date approaches.

November 4th I will be teaching in Lincoln at Southeast Community College Continuing Education from 6:30-8:30 pm

Here is a yummy recipe that came in my inbox last week. There is a $1/2 MQ HERE for Dole pineapple juice.

PACIFIC SUNSET
Prep: 5 min.
Makes: 1 serving
1 can (6 oz.) DOLE® Pineapple Juice (3/4 cup)
1/3 cup orange juice
Ice cubes
1 tablespoon grenadine syrup

Combine pineapple and orange juices over ice in glass. Slowly add grenadine syrup. Garnish with lime wedge if desired.

She made $12.25 off her purchase at CVS today because she got rainchecks. It may seem silly to get rainchecks but as a couponer it can be really smart. First of all, you get the deal you wanted so that is always a good thing. The other thing is that sometimes in the time you have to redeem the raincheck a coupon shows up and you can turn a good deal into a great deal.

Steam & Mash Potatoes

I also tried making "Steam & Mash" potatoes yesterday that a peep wanted me to share the recipe. The truth is that I didn't actually use a recipe and I don't know if they will work.

Last week, I bought the 10 lb bag of Russet potatoes for $1.48 at HyVee. That is way more than we will use so when I boiled potatoes for my roast yesterday I boiled twice as many as I needed. I just let teh boiled chunks of potato cool and put them into freezer contatiners. I will pull them out in the next couple of weeks and try them to see if they work like the OreIda version. Since, I got such a good deal on the potatoes I decided to try it. I've always thought that the steam & mash potatoes didn't seem like "rocket science" so we will see if OreIda proves me wrong.

I will report back and let you know if it worked. If it does then next I will try to make my own hashbrown freezer bags!

Whole Wheat Beer Bread

Yesterday, I made a loaf of whole wheat beer bread that was so yummy. I thought I would share the recipe at the request of one of my peeps. 

Whole Wheat Beer Bread

1 1/2 C whole wheat flour
1 1/2 C all purpose flour
4 1/2 tsp baking powder
1 1/2 tsp salt
1/3 C brown sugar
12 oz beer (the darker the better)

Preheat Oven to 350.
Lightly grease a 9x5 inch loaf pan.

In a large mixing bowl, combine all-purpose flour, whole wheat flour, baking powder, salt and brown sugar. Pour in beer, stir until a stiff batter is formed. It may be necessary to mix dough with your hands. Scrape dough into prepared loaf pan.

Bake in preheated oven for 50 to 60 minutes, until a toothpick inserted into center of the loaf comes out clean.

If you like an extra yummy crust, about 15 minutes from end of baking time, melt 1/4 cup butter and pour over loaf and but back in oven. This makes the crust extra crispy and tasty.

I found this recipe online HERE. I used Boulevard Wheat beer to make it so I didn't use a very dark beer and it was still really yummy. I also skipped the step of pouring butter over the bread. We ate it warm with a little butter on it so it was plenty buttery.

*If you don't want to make it with beer you could try root beer. I have been to Tastefully Simple parties and they have shared that you can make their beer bread with root beer. Sorry, I haven't tried it so I can't say for sure.
